Jul. 28th, 2009 11:41 amI've pottered online today to pay my Council Tax, buy a gorgeous (if creepy) poster, look for bikes in the classifieds and check up on the status of my order with BT. Just got back from Wales either yesterday or the day before; it ain't far into the summer holidays but I am extraordinarily willing to lose track of which day it is. :D
My parents and sister are coming to visit me at the beginning of next week, then G's staying for a while before dad comes to collect her again and bring me the six boxes of books that I left at home with them. This is awesome, since it means I can start reading those I haven't and bookcrossing those I don't want. I might head back to Southampton with them or I might not; haven't quite decided yet. I'm thinking that I'll have some kind of housewarming Saturday of next week, but that's still kind of an ephemeral idea - email me if you're interested, though, and I'll let you know details. Obviously my floor is open for occupation.
In the meantime I'm reading The Lies of Locke Lamora. I am in love.
Also: rice flour makes tolerable pancakes. Please note: it's not that I'm crap at flipping, it's that the first pancake is a traditional sacrifice to the pancake gods.

yup-without this sacrifice, your pancakes may become lumpy or even transform into wheat!

Dal and Carrot soup (serves 6, but you can freeze it)
1 tbsp oil
1 onion, chopped
1 clove garlic, crushed
1/2 tsp turmeric
1 tsp cumin
1 tsp coriander
pince cayenne pepper
1 cup rinsed and drained red lentils
2 cups (about 1lb) carrots, peeled and diced
1 tsp salt
1 cup coconut milk
1 tsbp lemon juice
Soften the onion in a large saucepan for 5 mins. Add garlic and spices and cook another minute. Add lentils, carrots, and 4 cups (1 litre) of water. Bring to the boil, then simmer for 30 mins or until carrots are soft. Blend, add the coconut milk and lemon juice, and return to the heat and simmer gently for 10 mins

Date: 2009-07-30 04:37 pm (UTC)Oatmeal pancakes- these are from the same book, hence the soymilk, but I've made them with cow juice and it's worked fine
1 3/4 cups oat flour
1/4 tsp salt
1/4 tsp cinnamon (optional, I felt it didn't really work)
3 tbsp ground flaxseed (again optional, it's for Omega-3 and such, but if you're not following a vegan diet you probably don't need the boost)
2 cups (500ml) soymilk
1 tbsp apple sauce or puree
1 tbsp maple syrup
2 tsp baking powder (I know commercial bakng powder has gluten, but you can make your own by using 1pt bicarb to 2 parts cream of tatar)
Mix together the dry ingredients except the flaxseed. Blend together the milk, syrup, applesauce and flax seed for one minute. Whisk in the dry ingredients and leave to stand for 10 mins.
You've probably already found out that gluten-free pancakes are more fragile, so make these smallish to prevent breakage.
