Hmmm, that's a hard one. Possibly Amber Riley's character on Glee? (I haven't watched in years so I don't know for sure.) Melissa McCarthy's character in The Heat. Somebody beat me to mentioning Queen Latifah in Last Holiday, but maybe also some of her other film characters get happy endings? I haven't watched enough of her stuff to be able to say for sure.
Tracy Turnblad in Hairspray, definitely. Would her mom count though? I mean, the character is female but the role has traditionally been played by a man in drag, so idk if that'd fit what you're looking for.
I feel like there have to be more than that, but I can't think of them :/
Oh, and idk if this counts as mainstream media or not, but this music video for Mary Lambert's "She Keeps Me Warm" is like a coffee shop/lesbian romance AU, and one of the women is plus-sized. It's completely adorable and never failed yet to put a smile on my face!
I second The Heat. I mean, it's not a romantic happy ending, but throughout the film, men who want her approach her and she's all, no dude, I know we had fun, but I'm not that into you.
